Yummy Easter Cupcakes

I am the first person to admit that I am not a natural at baking. I love baking, I’m just not very good at it. As Easter is fast approaching next weekend (which is also my birthday yay!), I decided that I wanted to make some really cute Easter cupcakes, and they actually turned out pretty good so I thought I would share them with you guys.

I decided to go for a chocolate sponge (as you can’t beat chocolate, especially at Easter) topped with pale pink butter cream icing with cute little mini eggs and sprinkles on top. They look cute, and taste so good.

Ingredients
150g caster sugar
150g unsalted butter
3 eggs (medium)
1 tsp vanille extract
120g self raising flour
30g cocoa powder
For the Icing
175g unsalted butter
350g icing sugar
pink food colouring

These cupcakes turned out really well for me, maybe I should bake some more cakes. The hard part is now not to eat them all! They are the perfect cute little cupcakes, and you can tell that they are definitely homemade…which isn’t a bad thing. It sounds silly but normal cooking/baking always turns out a disaster for me, I make a massive mess and something will always go wrong and ruin whatever I am trying to make. So I feel quite proud of these little cakes.
